Mother's Day is just around the corner, and there is nothing more beautiful than celebrating this special day with an equally special dessert.
Surprise your loved ones with a very special version of the classic French dessert: Crème Brûlée refined with Happy Foie.
Ingredients:
- 500 g Happy Foie Duck
- 200 ml Stage
- 200 ml milk
- 4 egg yolks
- 2 THE Cognac
- 1 tbsp Ingo Holland Wild Spice Salt and Pepper to taste
- Fine sugar for caramelizing
preparation
- Put cream, milk, cognac, and game spice into a small pot and bring to a boil. Season with salt and pepper to taste.
- Then slowly add the liquid in a fine stream to the beaten egg yolks and mix.
!!Attention: do not go too fast, otherwise the egg yolk may curdle!!
- Cut Happy Foie into small pieces, add it, and puree with a hand blender.
- Now pour the mixture into heat-resistant molds and cook in a water bath for 45 minutes at 95°C.
- To achieve a crispy caramel layer, sprinkle the surface with fine sugar and caramelize it with a blowtorch.
