Meeting our producers (Part 1/2)

Where does Happy Foie come from? In this article, we introduce Eiermacher, our supplier of duck livers. Eiermacher has been a pioneer of organic farming in the Austrian Alps for...

The company Eiermacher GmbH (EG) from Upper Austria has long been a pioneer in alternative farming methods. To give you an idea of the values and motivation of our producer, we spoke with Jens Eipper, the manager of organic duck farming.

  1. Why did you specialize in organic duck and poultry farming?

EG : We have been present in the organic egg sector since 1986, and then we acquired a slaughterhouse to diversify and offer meat in addition to our eggs. Raising our poultry and ducks organically therefore seemed obvious to us.

  1. How many animals does your farm have?

EG : We have 15 partner breeders who raise ducks for seven weeks, of course in accordance with organic legislation. When they are ready to be slaughtered, the animals return to our slaughterhouse. Each farm has an average of between 3,000 and 6,000 heads. The number of animals and compliance with standards are strictly regulated by organic regulations.

  1. What measures do you take to ensure that ducks are raised in a respectful manner?

EG : All our breeders are subject to organic certification and are therefore also subject to annual inspections. I am also responsible for maintaining regular contact with our partner breeders. The animals have a large outdoor space, organic feed, and unlimited access to water. Additionally, all indoor surfaces are covered with straw.

  1. What are your methods for reducing your waste and emissions?

EG : Our slaughterhouse draws its energy from photovoltaics and is heated by a boiler operating on locally sourced wood chips.

"Regarding animals, we try to make the most of all the resources they can provide. This has the direct effect that we need to slaughter as few as possible. We plan to separate the feathers directly at the slaughterhouse, for example."

To reduce plastic, we use FlatSkin cardboard packaging.

"We also treat and reuse our water, for example for washing trucks. This work saves a lot of resources and will also lead to further savings in the future."

  1. How to ensure profitability while respecting organic standards?

EG : The most important thing for us is to maintain high quality and to meet standards. Rather than disadvantaging us, the quality thus guaranteed to our customers means that they are willing to pay the corresponding price. This allows us to fairly compensate our employees and our breeders.
