Fig Chutney or Onion Confit

Preparation:

Cut the honey bread into slices about 1.5 cm to 2 cm thick.

Cut the Happy Foie into even slices from the Roll and place them on the honey cake slices.

As a topping, you can optionally use a small spoonful of fig confit or onion confit.

Finally, you can sprinkle currants on the dish according to your taste.

 

Happy Foie on golden toasted brioche

Brioche

Fruity jam or jelly, e.g. black currant jelly

preparation:

Cut your brioche to size and toast it on all sides in a little butter until golden brown.

Let your brioche discs cool down until they are just lukewarm.

While your brioche cools, prepare your Happy Foie and cut it into slices about 1 to 2 cm thick.

As soon as your brioche has cooled down, place the Happy-Foie slice on the brioche and enhance it with a fruity jam or preserve.

Happy Foie pralines with fruity raspberry coating

Ingredients:

- freeze-dried raspberries

- Happy Foie 250g roll, we recommend Happy Foie Duck

preparation:

Start with the freeze-dried raspberries.

Refine this in a mortar until you obtain a fine raspberry coating.

Pass the raspberry coating through a hair sieve to remove the coarse crumbs.

Take some Happy Foie in your clean hands and shape it into small pralines.
