This exquisite recipe combines our delicate goose liver mousse Happy Foie Finesse with an aromatic wild herb salad, fruity orange gel, and the enticing roasted aromas of brioche.

An elegant appetizer that delights with both its harmonious flavors and its visual finesse.

Ingredients:
  • Happy Foie Finesse (NEW: 100g or 300g)
  • 1 slice of brioche
  • 1 handful of wild herb salad
  • 2 tbsp orange fruit gel
  • 2 tbsp Vinaigrette (e.g. made from olive oil, white wine vinegar, honey, salt, and pepper)
  • butter for frying
  • Salt and pepper to taste
Preparation:
  1. Toast brioche: Heat some butter in a pan and toast the brioche slice on both sides until golden brown. Let it drain on paper towels.

  2. Arrange wild herb salad: Mix the wild herb salad in a bowl with the vinaigrette and lightly salt and pepper to taste. The herbs should be fresh and crisp.

  3. Happy Foie Finesse presentation: Cut the Happy Foie Finesse into slices. We recommend a slice thickness of 1-2 cm.

  4. Garnish: Arrange the wild herb salad elegantly on a plate, place the brioche slice on top, and finish with the orange fruit gel and the Happy Foie Finesse.

  5. Serve: Serve quickly and enjoy, so that the brioche is still warm and crispy.

A few drops of an intensely aromatic balsamic reduction or a hint of delicately roasted nuts can add an additional, refined flavor dimension to this exquisite appetizer.
