Happy foie pralines with a fruity raspberry coating

The alternative to conventional foie gras "Happy Foie" can also be enjoyed as a sweet variant: Happy Foie pralines with a raspberry coating.

Would you like to indulge yourself and your guests with the finest homemade pralines? This recipe combines the spicy flavors of Happy Foie with delicate sweet-sour accents from freeze-dried fruits.

For Happy Foie pralines you will need:

  • Freeze-dried raspberries or other sweet-sour fruits of your choice (during the Christmas season, it is recommended to alternatively use cocoa as a coating – the preparation process remains unchanged)
  • Happy Foie of your choice - we recommend a 250g Roll for this recipe.

preparation:

  1. Start with freeze-dried raspberries or fruits of your choice. Crush them in a mortar until you obtain a fine powder.
  2. Sift the dust through a hair sieve to remove the seeds and larger pieces.
  3. Take some Happy Foie in your hand and shape it into small pralines.
  4. Roll the shaped pralines in the fruit powder.

And there you go - your very own Happy Foie chocolates with raspberry coating are ready!
