Sometimes, it can be something truly special in the kitchen – how about homemade fries, served with an incomparably creamy Truffle mayonnaise made from the delicate Happy Foie Duck Truffle? This combination brings a touch of luxury and sophistication to the table, which not only delights gourmets but can also be served as a highlight at any dinner.

Ingredients:

For the fries:

  • 4 large potatoes (preferably waxy)
  • 2 tablespoons vegetable oil
  • salt to taste

For the homemade mayonnaise:

  • Happy Foie Duck Truffle
  • 1 fresh egg yolk
  • 1 tsp Dijon mustard
  • 150 ml vegetable oil
  • 1 tbsp white wine vinegar or lemon juice
  • Salt and pepper to taste
Directions:

1. Prepare fries:

  • Peel the potatoes and cut them into even sticks. Soak the potato sticks in cold water to remove excess starch.
  • Then dry well and moisten with vegetable oil. Place the potatoes on a baking sheet or in the air fryer and bake in the oven at 200°C for about 25-30 minutes or in the air fryer for about 15-20 minutes until golden brown and crispy. Turn occasionally while baking to ensure even cooking. Sprinkle with salt.

2. Make homemade mayonnaise:

  • Put the egg yolk and mustard in a bowl and mix. Add Happy Foie Duck Truffle to taste and combine into a smooth mixture. Then gradually add the vegetable oil in a thin stream while constantly stirring, until the mayonnaise thickens.
  • Add the vinegar or lemon juice and season with salt and pepper.

4. Plating and Serving:

  • Arrange the crispy fries on a plate and serve the Truffle mayonnaise in a separate bowl.
  • Optional, grate some still frozen Happy Foie onto the fries.
