Ingredients
250 g Truffle noodles from Greenohut
50 g Happy Foie
1 TL Truffle salt from Greenohut
2 tbsp Truffle oil from Greenohut
50 g Parmesan, freshly grated
200 ml Stage
50 ml milk
Fresh herbs (e.g. parsley or chives) for garnishing
Preparation of the ingredients
Finely chop garlic and shallots.
Wash the parsley, shake it dry, and chop it finely.
Grate Parmesan fresh and set aside.
Cooking pasta
Bring a large pot of salted water to a boil.
Add the Truffle pasta from Greenohut and cook al dente according to the package instructions.
Then drain the pasta, catching some of the pasta water.
Prepare aromatic base
Truffle oil from Greenohut heat in a large pan over medium heat.
Add the chopped shallots and garlic and sauté, stirring, until they are soft and fragrant.
Add cream and milk
Deglaze with cream and let the mixture simmer gently.
Add a splash of milk and some of the reserved pasta water to refine the sauce and achieve a creamy consistency.
Stir in the grated Parmesan until it is melted and well integrated.
Add pasta
Add the cooked pasta to the pan and mix well with the sauce so that all the pasta is evenly coated.
Season and refine
Season with truffle salt and add the chopped parsley.
Mix everything well so that the flavors combine.
Plating and Refining
Serve the truffle pasta on plates.
Finally, sprinkle some grated Parmesan over the pasta.
Grate the frozen Happy Foie over the dish to add a luxurious touch.
