- Dried Morels
- cognac
- Coffee
- law
- puff pastry
Preparation:
Form and bake the puff pastry.
Rehydrate the morels in cognac and coffee and bring to the boil. Heat the jus and add the morels.
Hollow out the puff pastry pockets. Remove Happy Foie with a hollow spoon and place in the hollowed out puff pastry pocket. Then serve with the morel sauce - Et voilà!
